Method of preparation:

Divide the dough obtained in two. Mix two tablespoons of milk with two tablespoons of cocoa and pour the mixture obtained in half of the dough. We divide the two types of dough again into 2, in order to obtain, at the end, 4 sheets.

Preheat the oven to 160 degrees. Spread one of the 4 parts of the dough on a tray (25 x 35 cm) lined with baking paper and put it in the oven. Bake for 10 minutes.

Proceed in the same way with the other 3 parts of the dough. After baking them, leave them to cool. In 1/3 of the pudding add 2 tablespoons of cocoa and mix well.

For starters, I will share the dearest recipe I have and that I can make with my eyes closed. It is the first recipe that I tried with my mother and that I now make on any special occasion.
I hope you enjoy :).

Ingredients: 1/2 kg sugar, 1 packet butter (250 g), 2 tablespoons cocoa, 3/4 cup milk, 4 eggs, 1 baking powder, 200 g flour.

Method of preparation:
Melt the sugar, butter, milk and the 2 tablespoons of cocoa over a low heat in a saucepan until it boils. Then remove 15 tablespoons of the composite in a small bowl or cup. The rest of the composition in the pan cools.
Separately, the egg whites are separated from the yolks and they are beaten hard.
After the composition of the pan has cooled, flour, egg yolks, egg whites, baking powder are added alternately. (example: a little flour, then a yolk, then a tablespoon of egg white foam, then baking powder and again from the beginning with flour, yolk, etc.)
Optionally, nuts can be added to this composition.
Put the composition in a tray lined with oil and flour and bake until the composition peels off the edge (about 30 minutes at 160 degrees)
When the tray has been removed from the oven, add the 15 tablespoons of the composition on top (this will be the icing).
Then remove to cool to harden the glaze.

To prepare the cream, add the pudding powder in the milk and put it on the fire. Stir constantly until a thick cream is obtained, then remove from the heat and leave to cool.

Margarine is mixed with sugar and vanilla sugar, then added to cold pudding. Mix well. Spread a top on a plate, cover with half of the cream, then place the second top on top and pour, evenly, the rest of the cream.

At the end, add round biscuits over which pour the melted dark chocolate. Cut the cake into slices and serve. Good appetite and increase cooking!

  • 100 gr dark chocolate
  • 250 ml sweet cream
  • 1 sachet of whipping cream

Method of preparation:

For starters we will prepare the countertop. Melt the chocolate and butter over medium heat. In a bowl, beat the egg whites, then add the yolks, sugar and vanilla sugar.

Add sifted flour with baking powder and cinnamon. Gradually add beaten eggs and melted chocolate. Pour the dough into a tray lined with baking paper. Bake the dough for about 30 minutes at a temperature of 180 degrees.

Now we can deal with orange cream. Wash an orange with warm water and peel it. Boil the peel for 10 minutes in boiling water. Add 100 g of sugar, leave it on the fire for a while and then take it out and let it cool. Put the orange peel through 30 g of sugar and let it dry.

Squeeze the juice of three oranges. Mix the pudding with 100 g of sugar, orange juice and liqueur. Put the pudding on the fire and mix until it thickens. Then let the pudding cool.

We cut half of the candied shell into pieces. Beat the sweet cream with the whipping cream hardener and add the candied orange peel cut into pieces. Add everything to the orange pudding.

To prepare the chocolate cream, melt the chocolate in a bain-marie. Put a tablespoon of melted chocolate aside. We will use it to decorate the cake. Beat the liquid cream with the hardener and mix it with the melted chocolate.

Pour the chocolate cream over the baking tray, and spread the orange cream on top. Put the cake in the fridge for 2 hours, then decorate it with melted chocolate and candied orange peel that is left.

Leave the cake in the fridge for a few hours then cut it into slices and serve it with your loved ones. Good appetite and increase cooking!


Leaf cake

The top made of 10 eggs is quite large. If you need a smaller countertop, use fewer eggs, e.g. 5, pt. which keeps the proportions of sugar and flour, ie one tablespoon of each, for each egg used.

This network is for a yellow countertop. For a countertop with cocoa, put 1-2 tablespoons of cocoa, instead of 1 or 2 tablespoons of flour.

Baking powder is optional, it can be replaced with a small teaspoon of baking soda quenched with lemon. The top comes out fluffier this way, but if the cake is intended for the little ones, it is good to avoid using growth additives.

Method of preparation:

1. Separate the egg whites, sprinkle with a pinch of salt and beat (with a mixer or whisk) the foam. Add the sugar and baking powder and beat again until the sugar is melted and incorporated, and the foam has a strong consistency. (As a test, carefully turn the bowl upside down. If the foam does not start to drip from the bowl, then it is ready.)

2. Mix the yolks with the vanilla sugar / vanilla essence and grated orange peel and pour this mixture over the egg white foam. Stir gently until incorporated.

3. Add the flour and mix lightly, using only the spoon, from the bottom up until the whole amount of flour is incorporated. The movement is slow, otherwise the egg foam is left.

4. Prepare the tray in which we want to bake the top:

  • either we use baking paper (the simplest),
  • or wallpaper it like this: grease the tray with a little oil and sprinkle a little flour over the greased parts. In this way, the baking tray comes off much easier.

5. Pour the composition into the tray, make it uniform and put it in the oven (approx. 160 ° C). Leave for 15 & # 8211 30 minutes (I check by smell). When baked, the countertop turns golden. Check with a toothpick / wooden stick. Push the top and then remove the stick: if it is clean, the top is baked, and if it remains dough, it must be left in the oven.

It is good not to go to the oven, until we consider that the countertop is approximately ready, otherwise it can be left. After removing from the oven, leave to cool. When it is cold, peel it off the tray or on the baking paper and cut it as needed.
