For the dough: Cut the margarine into cubes and add the yolks, sugar, lemon peel, baking powder, rum and salt, then sift the flour and "mix" with your fingers until you get a uniform dough. Be careful not to stick to your fingers when kneading!
Cheese cream: Rub the cheese with the sugar and the yolks and the rum essence. Then add the beaten egg whites and raisins. It is important that when adding the egg whites to mix with a spoon (preferably wooden) with circular motions.
In a round tray (mine is 28 cm in diameter) press the dough with your fingers and make sure to spread it on the edges, evenly like a tart. Then add the cream cheese and put in the preheated oven over medium heat for about 45 minutes. Then we close the oven (even if it seems to you that the cheese has not hardened, that is, it is still "shaking") and we leave it there for another 2 hours until it cools down.
Ideally it would be to stay in the fridge overnight but we couldn't help it ... :))
